grain silos, in a packing room, adjacent to the massive old steam boiler or in
the spaces where grand wheat purifier machines once rumbled. Each room captures
the spirit of heritage industrial enterprise but without compromise to all the
elements of a small luxury hotel. Whilst adventures abound with the whole Great
Southern region on your doorstep, we’ve our fair share of guests who see their
room at the Premier Mill Hotel as the best part of their escape to the country.
It takes only a short time in the country for you to
feel its social fabric. How people are connected to each other, to their land

and its home town of Katanning rests at a place where many of these stories
intersect. It’s where the great biogeographical regions meet: with the Jarrah
forests to the west, the Avon Wheatbelt to the north, the Mallee to the east
and the Esperance Plains to the south. It’s where three great language groups
of the Noongar nation, Wilman, Goreng and Kaneang all converge. Each of our

When eating or drinking at the Premier Mill Hotel you’re not going to be doing it alone. We like good old fashioned inn-keeping where travellers always have a chance to mix it up with the locals. The Dome Café on street level is a much loved place where people from across the district come to rest, work and play. Open from 6am to 9pm daily, it’s casual in nature with simple comfort-food as its fare for breakfast, lunch, dinner and everything in between. Open from 3pm daily, below street-level in the Mill’s old machine-room is The Cordial Bar. A wine bar named in honour of our founder’s 1800’s enterprises in viticulture, aerated waters and cordials, this is also a favoured place for locals to end their day. A share-plate menu complements the stunning range of wines and craft beers from the Great Southern region.
